Cookbook Ep1. Chicken pot pie

Bates motel might be one of my favorite Netflix shows I watched in 2020. Crazy as Norma is, her turkey pot pie caught my eye. So I decided to try out a chicken pot pie recipe.

This is a recipe for 9-inch pie pan. Bake at 425˚F for 30–35 minutes.

Ingredients:

  • 2 pie crust
  • 4 cups cooked chicken shredded*
  • 6 Tbsp unsalted butter
  • 1 medium yellow onion (1 cup chopped)
  • 2 medium carrots (1 cup) thinly sliced
  • 8 oz white or brown mushrooms (stems discarded), sliced
  • 3 garlic cloves minced
  • 1/3 cup all-purpose flour
  • 2 cups chicken stock
  • 1/2 cup heavy cream
  • 2 tsp salt plus kosher salt to garnish
  • 1/4 tsp black pepper plus more to garnish
  • 1 cup frozen peas do not thaw
  • 1/4 cup parsley finely chopped, plus more to garnish
  • 1 egg beaten for egg wash

Tips:

  • I followed Youtube video by Natashas Kitchen https://www.youtube.com/watch?v=W1XELWKaCi4.
  • I used a store-bought pie crust. The crust is just as flaky!
  • Shredded chicken can be replaced with turkey or ham.
  • The amount of chicken stock can be adjusted depends on the vegetables you put in.
  • The cream can be replaced with milk.
  • Brushing the egg wash on the top pie crust is crucial for getting the beautiful golden color.
  • Slice the top pie crust.
  • Let pie sit for half an hour after moving it out of the oven.
