Bates motel might be one of my favorite Netflix shows I watched in 2020. Crazy as Norma is, her turkey pot pie caught my eye. So I decided to try out a chicken pot pie recipe.
This is a recipe for 9-inch pie pan. Bake at 425˚F for 30–35 minutes.
Ingredients:
- 2 pie crust
- 4 cups cooked chicken shredded*
- 6 Tbsp unsalted butter
- 1 medium yellow onion (1 cup chopped)
- 2 medium carrots (1 cup) thinly sliced
- 8 oz white or brown mushrooms (stems discarded), sliced
- 3 garlic cloves minced
- 1/3 cup all-purpose flour
- 2 cups chicken stock
- 1/2 cup heavy cream
- 2 tsp salt plus kosher salt to garnish
- 1/4 tsp black pepper plus more to garnish
- 1 cup frozen peas do not thaw
- 1/4 cup parsley finely chopped, plus more to garnish
- 1 egg beaten for egg wash

- I used a store-bought pie crust. The crust is just as flaky!
- Shredded chicken can be replaced with turkey or ham.
- The amount of chicken stock can be adjusted depends on the vegetables you put in.
- The cream can be replaced with milk.
- Brushing the egg wash on the top pie crust is crucial for getting the beautiful golden color.
- Slice the top pie crust.
- Let pie sit for half an hour after moving it out of the oven.
